Within two days of moving into our new place in the Seattle area, we had two things on our kitchen windowsill - a potted African violet and a big ol' basil plant that we found at Trader Joe's. Because when summertime arrives, having fresh basil on hand is a must for impromptu caprese-inspired recipes, easy salad dressings and savory crostini.

With basil aplenty in the kitchen, a constant summertime yearning for all-thing-caprese and packages of Little Potato Company Creamer potatoes always on hand, these caprese potato skewers practically made themselves. The beauty of the Oven/Grill Ready potatoes is that you can just toss the potatoes with a little olive, the seasoning package and roast the potatoes right in the package. Perfect for a last-minute side dish or to use as part of an appetizer. I used the Garlic Herb potatoes for this recipe, but any of the flavors would work well.

Once the potatoes are tender, thread each one onto an appetizer skewer with a cherry or grape tomato, a mini mozzarella ball (bocconcini) seasoned with olive oil and salt, and a basil leaf. Stack these little skewers up on a platter, set them up on the appetizer table and watch them disappear. Truth be told, I made these in the afternoon and ate more than my portion for dinner. If you love caprese and you have a thing for potatoes like I do, these appetizers will become your favorite summertime savory treat.

The only thing better than appetizers that are easy and delicious are ones that are also good for you. Protein from the cheese, and tons of vitamins from the potatoes and Creamer potatoes. Fiber, antioxidants, potassium...the list goes on! Of course you don't even have to tell your guests that - they'll just love the taste.

Ingredients

  • 1 pound Little Potato Co. Oven | Grill Ready potatoes I used Garlic Herb
  • 24 cherry tomatoes
  • 24 mozzarella balls bocconcini
  • 2 teaspoons extra virgin olive oil
  • ¼ teaspoon salt
  • 24 small basil leaves

Instructions

  • Preheat the oven to 450 degrees F.

  • Prepare the potatoes according to package directions: Remove and discard the cardboard and plastic film. Mix the potatoes with the olive oil and enclosed seasoning package. Cook until the potatoes are tender, 30 to 40 minutes.

  • Let the potatoes rest until cool enough to handle.

  • Place the tomatoes and mozzarella balls in a medium bowl. Toss with the olive oil and salt.

  • On to each skewer, thread 1 tomato, 1 mozzarella ball, 1 basil leaf and 1 potato.

  • Arrange on a serving platter. Serve.

    These are so adorable, and I be they taste just fabulous. I love potato on skewers. I tried to do them once with potatoes and garlic bread but they didn't work out too well. Bread was WAY too crisp. Lol. I need to give this recipe a whirl. I think hubs would go bonkers for this one. He's a serious tomato lover.

    I've made this exact salad skewer before, minus the little potato. I love the Little Potato Company. During the fall I buy them all the time. I didn't realize they made theses, they look SO good!!
