My love of Mexican food has been taking a bit of a hit with the healthier eating that has been happening in our home. Some of my old favorites don’t match up to the healthier meals that I’ve been making. Luckily, all hope isn’t lost. There are ways that I’ve been able to work my favorite cuisine into our menu plans.
One meal that is proving to be a favorite in our house is these Mexican Beef Taco Lettuce Wraps. We’ve made Asian-style Lettuce Wraps several times, so it only made sense that a taco meat would be a great option for Mexican-style Lettuce Wraps.
Ingredients Needed for Mexican Beef Taco Lettuce Wraps:
- Onion (Medium)
- 90-92% Lean Ground Beef
- Sweet Peppers or Bell Peppers
- Salt
- Butter Lettuce (1 Head)
- Optional Toppings: Chopped Cilantro, Sour Cream, Shredded Cheese, Tomatoes, Avocado, Salsa.
- Chili Powder (1 Tablespoon)
- Cayenne Pepper (1/2 Teaspoon)
- Garlic Powder (1/2 Teaspoon)
- Cumin (1 Teaspoon)
Cooking Equipment Needed for Mexican Beef Taco Lettuce Wraps:
Our Beef Taco Lettuce Wraps recipe is very easy to make, and you will only need a few ingredients, plus your choice of toppings. The main ingredient is Laura’s Lean Ground Beef.
The lean beef is paired with delicious additions like diced onionsandcolorful sweet peppers.
And I’ve even mixed up ahomemade taco seasoning.If you usually use packaged taco seasoning, I strongly encourage you to give this a try. Not only is it’s easy to make, but it’s sogood!
To eat the beef taco meat mixture, we use butter lettuce leaves instead of our usual fried taco shells.I like to buy my butter lettuce at Costco, but you can find it in the produce section of most grocery stores. Just separate the leaves from the head, wash and shake dry. They form the perfect little “cup” for holding your beef taco meat.
You can use butter lettuce as a tortilla substitute for all types of tacos. Here are some additional taco ideas:

Ingredients
Scale
1 medium onion, diced
1 pound Laura’s 92% Lean Ground Beef
1/2 cup sweet peppers, diced (mini peppers or bell peppers)
taco seasoning (recipe below)
3–4 tablespoons water
Salt, to taste
1 head butter lettuce, leaves separated
Optional toppings: chopped cilantro, sour cream, shredded cheese, diced tomatoes, diced avocado, salsa
Taco Seasoning
1 tablespoon chili powder
½ teaspoon cayenne pepper
½ teaspoon garlic powder
1 teaspoon cumin
Instructions
1. In a small bowl, mix together taco seasoning ingredients and set aside.
2. In a large skillet, cook beef and onions together in a large skillet over medium heat until meat is
browned and nearly fully cooked. Add peppers to meat mixture and continue to cook until meat is fully
cooked and peppers are tender-crisp.
3. Sprinkle meat mixture with approximately 2 teaspoons of taco seasoning (using less or more depending
on personal tastes). Save remaining taco seasoning for another meal. Drizzle water over seasoning and stir
to combine with meat. Season with salt to taste, if desired. Remove from meat when meat is hot and
seasoned.
4. To serve, place 2-3 butter lettuce leaves on individual plates. Spoon some of mixture into
centers of leaves. Top with optional toppings, if you wish.
